Yup, pups love sweet potatoes. We love them because they are high-energy, low-calorie, fat-free, yummy ingredient. They are rich in beta-carotene, Vitamin A and loaded with potassium. These nutrients help to ensure heart health. Good for enthusiastic tail-waggin’ and healthy hearts. That’s a win – win!

• 1 ½ Cups Whole Wheat Flour
• 1 Cup Rolled Oats
• 1 Cup Oat Bran
• 2 teaspoons Baking Soda
• 1 teaspoon Cinnamon
• 2 Apples, peeled and diced
• 1 Egg
• ¼ Cup Honey
• 3 Tablespoons Vegetable Oil
• ¼ Cup Walnuts
• 1 Cup Skim Milk

Preheat oven to 400°. In a bowl, combine flour, oats, oat bran, baking soda and cinnamon. Add apples, egg, honey, oil, and walnuts. Stir thoroughly. Add milk and mix thoroughly. Spoon batter into well-greased muffin tin so that cups are three-quarters full and bake for 20 to 25 minutes. Cool before serving and store in a sealed container.

Makes 16 Moonstruck Muffins

Short Bio: “Third time’s a charm” is a motto I live by.  My forever family is the third family to adopt me.  I’ve been with my momma now for 3 years and she reminds me every day that she’s very lucky to have me in her life.  I enjoy car rides, riding on the ATV with my daddy, going to Day Camp to play with my friends and visiting the local Three Dog Bakery with my momma!

Oats are high in:

• Protein (interestingly, wild oats contain from 27-37% protein while cultivated varieties average about 17%). According to the World Health Organization, oat protein is equivalent in quality to soy protein. So, equal to meat, milk and egg protein.
• Soluble fiber (the fiber that helps keep cholesterol levels low)
• Levels of iron, manganese, zinc, and B vitamins

Oats are low in:

• Gluten (some is present, but not nearly as much as in wheat)
• Genetically Modified Organisms (so far, oats are not grown using GMO)

• 2 Tablespoons Honey
• 2 ¾ Cups Water
• ¼ Cup Unsweetened Applesauce
• ⅛ teaspoon Vanilla
• 1 Egg
• 4 Cups Whole-Wheat Flour
• 1 Cup Dried Apple Chips
• 1 Tablespoon Baking Powder
• 1 Tablespoon Cinnamon
• 1 Tablespoon Nutmeg

Preheat oven to 350°.  In a bowl, mix together honey, water, applesauce, vanilla, and egg.  Combine flour, apple chips, baking powder, cinnamon, and nutmeg in a separate bowl and mix thoroughly.  Add wet ingredients to dry ingredients and mix well, scraping sides and bottom of bowl to make sure no dry mixture is left. Spoon into a well greased muffin pan so that each cup is three-quarters full and bake approximately 1 hour.  Cool and store in a sealed container.

Makes 12 stroke-of-midnight scrumptious snacks!

Best Trick: My dad taught me how to sneeze when he says “ah-choo”. Every time I do it right after he says “ah-choo” I get a treat. But the joke is on my parents, most of the time I really have to sneeze!

Short Bio: I have a lot of energy and love to go on walks. My mom is a runner and sometimes she lets me and my brother go with her. Normally we are really worn out after, but very happy. I like going out to the lakes to swim, but I don’t like getting too wet. I normally run along the beach as my brother swims out to get the ball, then I chase him as he gets out of the water. In the winter I like to run through the drifts in our back yard and root around for any missing balls we have out there. I also like to wrestle with Boris in the snow too. I know, though, that when I get back in my parents will have a bowl of the Baked Fish and Sweet Potato food with warm water mixed in. In the house I like to chase the smelly cats down into the basement so I can climb up on my mom or dad’s lap and get belly rubs. Boris tries to do the same but I am smaller in build so I can normally weasel my way in between. It’s a good thing we have a mom and a dad so we have two laps to choose from! I also love helping my mom plan lessons for her fourth grade class and help her with laundry, or anything else that helps me become the center of attention.

Add wet ingredients to the dry ingredients and stir, mixing well. Spoon into a well greased muffin tin, filling each cup 2/3 full. Bake for 35 minutes. Store in a sealed container.
